Ingredients:
1 ea Whole U.S. Turkey (~5kg)
As needed HELA Chicken Extra
1 Sprig Rosemary
2 Sprig Thyme
200gm Carrots
150gm Celery
200gm Onion
125ml Dry White Wine
500ml Brown Chicken Stock
Directions:
Remove the U.S. Turkey from the packaging
Remove contents in the belly and the neck cavity. (Use the liver, stomach and heart for a stuffing or add to the sauce)
Wash the U.S. Turkey inside and out
Rub the inside with HELA Chicken Extra seasoning and place the herb spring inside
Rub the outside with a little cooking oil and sprinkle evenly with HELA Chicken Extra
Sprinkle the diced vegetables on to the baking tray
Place the U.S. Turkey on top of the vegetables
Put the U.S. Turkey into the oven at 170oC and cook for 2 – 3 hours (Exact time depends on the oven). Some water may be added to the tray to keep the turkey moist
Should the color of the U.S. Turkey become too dark cover with aluminum foil
When cooked (core temperature 73oC) remove the U.S. Turkey from the oven
Pour the fat out from the tray. Cover the U.S. Turkey with aluminum foil and rest at a warm place
Heat the tray on the stove and deglaze with white wine
Add the brown stock
Bring to the boil
train and season as needed
Serve the U.S. Turkey with stuffing, sautéed potatoes, vegetables and the gravy on the side
